A cozy, sensual dinner recipe for one soul, or two who share one fire.
Main Dish:
Gingered Chickpeas in Hoisin-Tahini Glaze with Garden Herbs
Ingredients:
1 can chickpeas, drained and rinsed
1 tbsp olive oil
1/2 green bell pepper, diced
2 tbsp fresh ginger, finely chopped
1 green onion, chopped (fresh from the garden if possible)
A few fresh Thai basil leaves
1 small tomato, diced
1 tsp fennel seeds
For the glaze:
2 tbsp hoisin sauce
1 tbsp tahini
1 garlic clove, crushed
Optional: splash of tamari for salt depth, or a touch of maple syrup for extra sweetness
Instructions:
1. Warm olive oil in a skillet over medium heat.
2. Add bell pepper, ginger, and fennel seeds. Sauté until fragrant and slightly softened.
3. Stir in chickpeas, diced tomato, and green onion. Cook 5–7 minutes.
4. In a small bowl, whisk hoisin, tahini, garlic, and a splash of water until smooth. Pour over chickpea mixture.
5. Simmer on low, allowing the sauce to thicken and coat everything in rich, fragrant love.
6. Finish with torn Thai basil leaves. Serve warm, as is or over jasmine rice, quinoa, or even spooned into warm pita.
Side Dish:
Aura’s Vegan Caesar Salad with Crouton Crumble
Ingredients:
1 heart of romaine, chopped
Vegan Caesar dressing (store-bought or made from cashews, garlic, lemon, dijon, and capers)
Croutons or toasted sourdough torn into bite-sized bits
Optional: nutritional yeast, black pepper, lemon zest
Instructions:
1. In a large bowl, toss romaine with dressing until coated.
2. Sprinkle generously with crouton crumbles, a dusting of nooch (nutritional yeast), and cracked black pepper.
3. For extra brightness, finish with lemon zest or a quick squeeze of lemon.
