Golden Tempura “Shrimp”

Hearts of palm, cut into shrimp-sized pieces
½ cup flour (all-purpose or rice flour for a lighter texture)
½ cup ice-cold sparkling water
Pinch of sea salt
Pinch of baking powder (optional)
Neutral oil for frying

Tamari or soy sauce
A touch of maple syrup
Fresh grated ginger
A squeeze of lime

Method:
Begin by preparing the hearts of palm.
Gently pat them dry and cut into soft, curved pieces reminiscent of shrimp. Their natural texture lends itself beautifully to this transformation.
In a separate bowl, combine the flour, salt, and sparkling water.
Stir lightly, allowing the batter to remain slightly uneven. This creates the signature airy crispness.
Heat oil in a pan until it reaches a gentle shimmer.
Dip each piece of hearts of palm into the batter, letting any excess fall away, then place carefully into the oil.
Fry briefly until golden and light, turning once if needed.
Remove and rest on a paper towel, finishing with a soft sprinkle of sea salt.
